SENSES is a collaboration between two Michelin-star chef Damien Grey and Master Blender Rupert Egan, featuring five 23-year-old Irish single malt whiskey casks, each representing a key taste—bitter, sour, salt, umami, and sweet. Rupert worked closely with Damien to complete the ageing process of each whiskey in a unique final cask, enhancing a specific flavour profile. Purchasers also receive a tasting menu at Liath to experience the concept firsthand, making this a one-of-a-kind exploration of both gastronomy and whiskey.
